  • BROWN RICE ATTA CRACKERS

Ingredients: Approx 100 gms of Whole Wheat Atta from Desi Atta Company, 30 gms of Brown Rice Atta from Desi Atta Company, 45ml water, 10ml olive oil, salt to taste, 5 gms of chili paste, 5 gms of garlic paste, oregano to taste.

Method: Sift together the whole wheat flour and the brown rice flour together and set aside. Add salt oregano, garlic paste, chili paste, water to make a dough. Rest the dough for 30 minutes. Preheat oven at 150c. Roll the dough and cut rectangles to get the shape of crackers and poke a few holes with a fork. Bake for 15 minutes in same temperature and let cool without the baking sheet.

  • BAJRA ATTA PIZZA BASE

Ingredients: 340gms Bajra Atta from Desi Atta Company , 85gms Wheat Flour from Desi Atta Company, 5gms Yeast, 5gms Sugar, Salt to taste, 7.5ml Olive Oil,170ml Water.

Method: In the fourth cup of water add yeast and sugar and keep it aside for it to get activated. When it’s done add 1 and a half tsp oil, half tsp salt and whisk it well. Add the atta and make a dough and set aside for it to rise. Make 2 balls with the dough and flatten it out into a pizza base. Bake in the oven for 8-9 minutes at 150 degrees.

  • BAKED NIPPAT

Ingredients: Brown Rice Flour from Desi Atta Company  - 1 1/2 Cup, Semolina - 2 Tbsp, Roasted Groundnuts - 1/2 Cup(Coarsely Ground), Warm Water - 1/4 Cup Or As Required, Sesame Seeds - 3 Tsp, Oil - 1/3 Cup , Melted Butter - 3 Tbsp, Onion -1(Finely Chopped), Green Chilies - 4 To 5(Finely Chopped), Red Chili Powder - 1/4 Tsp, Curry Leaves - 1/2 Cup Salt To Taste

Method: In a mixing bowl add all the ingredients with a spoon of hot oil and form soft dough and let it rest for 30 minutes. Preheat the oven to 180 degree. Flatten out the dough into a chapatti and cut small bite size pieces or any size you prefer. Arrange them on parchment paper and put in on the baking tray in the oven. Prick the disks before you start the baking. Temperature at about 200 for 20 minutes. It will become crispy as it cools down.


  • BEETROOT COOKIES

Ingredients: Butter 1680 gm, icing sugar - 930gm, Beetroot Wheat Atta from Desi Atta Company - 2160gm, Rawa from Desi Atta Company - 400gm, Vanilla essence - 10 Ml

Method: Preheat oven at 180 degrees. In a bowl mix the butter and sugar till there are no lumps of dry sugar. Add the ingredients to the butter to form dough. Once the dough is ready set aside in the fridge to set. Make cookie size rounds on the baking tray and bake it at 180 for about 12 minutes.
